Ingredients:

2 tablespoons unsalted butter

1½ ounces unsweetened chocolate, roughly chopped

¼ cup buttermilk

1 tablespoon pure vanilla extract

1 large egg

1 cup all-purpose flour

¼ cup plus 2 tablespoons granulated sugar

¼ cup plus 2 tablespoons cocoa powder

¾ teaspoon baking powder

¼ teaspoon baking soda

½ teaspoon kosher salt

Vegetable oil, for deep frying

2 cups powdered sugar

2 tablespoons milk

2 teaspoons pure vanilla extract

Preparation:

To prepare dough, using a double boiler, heat butter and chocolate on top of saucepan with slightly simmering water on bottom until melted. Turn off heat, then set aside to cool. Pour in buttermilk and vanilla. Mix in egg. Whisk until combined.

Next, mix flour, sugar, cocoa powder, baking powder, baking soda, and salt in a large bowl. Pour liquid ingredients into bowl. Stir until mixed and dough forms. Remove from bowl and wrap in plastic wrap. Keep refrigerated for 30 minutes.

Preheat oil to 360° F 3-inches deep in a heavy bottomed pot.

Scoop out small pieces out of dough and form into balls using your hands. Deep fry only a few balls at a time so as to not overcrowd pot.

Cook balls for about 2 to 3 minutes until cooked through. Remove from oil using a slotted spoon, then arrange onto a baking tray lined with paper towels. Let cool.

As munchkins cool, make glaze by combining powdered sugar, milk, and vanilla in a bowl. Whisk until it forms a smooth consistency similar to heavy cream.

Glaze to coat with a fork or some tongs, raising it above glaze to let drip any excess. Transfer to a rack over a baking tray.

Serve once glaze dries.
