Ingredients:
½ tablespoon canola oil
½ cup mushrooms, chopped
½ cup carrot, grated
⅓ cup broccoli, sliced
2 tablespoons onion, finely chopped
1 tablespoon red bell pepper, finely chopped
1 teaspoon soy sauce
1 dash cayenne pepper
1 dash black pepper
1 dash salt
2 flour tortillas
¼ cup cheddar cheese, grated
¼ cup mozzarella cheese, grated
¼ cup sour cream
¼ cup salsa, medium or mild to taste
¼ cup shredded lettuce
Preparation:
Heat oil in a large skillet. Add mushrooms, carrots, broccoli, onion, and bell pepper. Stir-fry over medium-high heat for about 5 minutes. Pour in soy sauce, then season with cayenne, salt, and pepper. Transfer vegetables onto a plate. Set aside.
In the same skillet, heat first tortilla. Top with cheddar and mozzarella cheeses, followed by the cooked vegetables. Cover with second tortilla. Cook for about 1 minute on each side or until cheeses are runny.
Cut into slices.
Serve hot with sour cream, salsa, and shredded lettuce on the side.
