Ingredients:

2 packages of rapid raising yeast (¼ ounce each)

¼ cup warm water, about 105°F

1½ cup lukewarm milk, scalded then cooled

½ cup white sugar

1 teaspoon salt

2 eggs

⅓ cup shortening

5 cups all-purpose flour, plus more for rolling dough

Canola oil, for deep frying

Glaze:

⅓ cup butter, melted

2 cups powdered sugar

1½ teaspoon vanilla

3 tablespoons hot water

Preparation:

In a bowl, melt yeast in water. Then, combine with milk, ½ cup sugar, salt, eggs, shortening, and 2 cups flour.

Using a mixer, whisk on low speed for 30 seconds while scraping sides of the bowl. On medium, continue to whisk for an additional 2 minutes. Mix in the rest of the flour until completely blended.

Let rest for about 50 minutes or until dough rises to twice its original size.

Transfer onto flat surface sprinkled with flour. Using a flour rolling pin, flatten dough until it is ½ inch thick. Cut into shape using a doughnut cutter. Let rest for another 30 minutes for the dough to rise.

In a deep fryer, preheat oil to 350°F. Working in batches, carefully drop doughnuts into the deep fryer. Once floating, flip. Cook for about 1 minute per side or until lightly brown. Gently scoop out using a slotted spoon and transfer onto a plate lined with paper towels.

Mix all the glaze ingredients, except water, in a bowl until smooth and well-blended. Gradually add water, about 1 tablespoon at a time. Whisk until smooth. Dip doughnuts in glaze. Serve.
